This is a new take on our traditional, Polish cucumber salad that we discovered on Atticus’s 3rd birthday while in Cass, West Virginia. It went perfectly with his traditional birthday meatloaf. This is a new way to include veggies, especially if you have a toddler. Salads are not appealing or super fun for them… but the flavor of this one is simply delectable. No one can resist those mustard seeds, which by the way… are the secret ingredient!
Include cucumber in your diet with this delicious salad!
INGREDIENTS
All ingredients can be adjusted and measured to taste and sliced to your preference.
4 cucumbers.
½ yellow onion.
3 celery stalks.
½ green bell pepper.
DRESSING
2 cups of vinegar.
1 cup sugar.
1 tablespoon of salt.
2 tablespoons celery seeds.
2 tablespoons of mustard seeds.
The mustard seeds and chopped onions give that special taste that elevates this salad.
HOW TO MAKE THIS TASTEFUL SALAD
- Combine ingredients for dressing to the preferred taste in a bowl. Reserve extra in a salad dressing cruet.
- Add green pepper and celery.
- Cover and refrigerate overnight so vegetables soften (skip this step if you prefer a crunchier salad).
- Add cucumbers and onions and refrigerate for 4-6 hours so the vegetables can absorb the dressing. Add remaining dressing if desired.
- Garnish with parsley and serve!
This salad is the perfect pairing for any meal.
