The Perfect Pumpkin Muffins For This Autumn

 

The autumn season stirs up our senses for anything pumpkin spice. After I bought my first home, I entertained every month of the year but in autumn I would invite guests over every weekend and delight them with brunch or an afternoon tea. These muffins were the perfect complement to cinnamon tea and coffee, or warm with honey butter and a side of sliced apple, fresh from our September pickings at area farms. I would even bring in batches into the office, warming the tummies of my coworkers. You can choose to replace the sugar and vegetable oil with applesauce and lower the quantity of sugar used.

INGREDIENTS 

(Makes one dozen muffins)

2 ½ cups flour

2 ½ teaspoons baking powder

1 teaspoon cinnamon

1/8 teaspoon salt

1/8 teaspoon nutmeg

2 eggs

2 cups sugar

½ cup vegetable oil

1 teaspoon vanilla

1 (15 ounces) can of pumpkin filling

 

OPTIONAL ADD-INS

½ orange, zested

1 cup chopped walnuts or pecans

1 cup semi-sweet chocolate chips

1 cup dried cranberries or raisins

 

STREUSEL TOPPING:

3 Tablespoons butter
¼ cup flour
¼ cup sugar
Dash of cinnamon combined
Powdered sugar for decoration

A glass of milk is a perfect match for our pumpkin muffins.

 

HOW TO MAKE THESE EASY AND DELICIOUS MUFFINS:

  1. Combine ingredients:

Combine dry ingredients with a wire whisk in a bowl. Beat the eggs, sugar, oil, and vanilla at medium speed in a separate mixing bowl until smooth. Add the pumpkin and beat until blended. Add the flour mixture gradually, beating constantly.  Stir in desired add-ins.

  1. Prepare muffin tins:

Fill paper-lined muffin cups (or grease muffin cups) about ¾ full. If using streusel topping, add on muffins now before baking.

  1. Bake at 350°F:

Bake in preheated oven for 25-30 minutes or until lightly brown and a toothpick inserted in the center comes out clean.

  1. Let them cool: 

Let cool for 5-10 minutes on a wire rack. Sprinkle with powdered sugar to serve.
